Easy Easter Bunny Cupcakes

I’m going to make these cupcakes for my daughters class as they are so quick and easy, and use Peeps, which every child seems to love!

Take a chocolate cupcake (so it looks like dirt) and cut the center out with a knife.

Make sure you leave enough cupcake around the edge so you can ice it with green icing to look like grass.  Save the cupcake that you cut out.

Rough ice around the whole in the cupcake with green icing and then pop the rabbit in the hole.

Crumble some of the left over cupcake center around the rabbit to look like dirt it’s burrowed up.

Then because I love sprinkles I added a few flowers around the rabbit and a butterfly on it’s ear.

They were really quick and easy so they make the perfect cupcakes for a class party.

Monster Cupcakes

You don’t have to have anything fancy to have fun with cupcakes, just cupcakes, icing and some candy.  My children are pretty good at icing with a spoon now and we were having a ‘monster’ day, so we decided to make monster cupcakes.

Tootsie roll horns, M&M eyes and banana runt horns created this monster.

M&Ms, banana runts and a candy melt made this friendly looking monster.

Hershey’s kisses and M&Ms made the monster below, but give your children any kind of candy and some icing, and they will come up with wonderfully creative things.

Making Cupcakes Cute

I saw the suggestion in a Martha Stewart cupcake book to cut out pictures, stick them on toothpicks and use them as cupcake toppers.  I’m very lucky because I have a Cricut so I can custom cut shapes to top my cupcakes with, but you could just as easily cut out pictures from wrapping paper or print out clip art to use instead.  These were for the dinosaur party I hosted recently.

Also at Christmas I couldn’t find any Christmas sprinkles that tasted good enough to serve on cupcakes for adults so I cut out ‘Merry Christmas’ and some Christmas trees and used those as toppers and they looked just a bit different from your regular cupcakes.

Swirly Iced Cupcakes

If you ever have several colors of icing left over and you can’t be bothered to wash out your piping bag, don’t.  If you just keep filling the piping bag without cleaning out the previous color it looks so pretty.  My camera makes the colors look much brighter than they actually were but the cupcakes made a really cute display.

Cupcake Nest

I had one little cupcake left over from a batch I’d made and while my daughter and her friend were decorating chocolate crispy nests and chocolate pretzel nests, I decided to try to make a cupcake nest.  I only had a green cupcake left but I would probably have used a vanilla or chocolate cupcake.

First I cut out the center.

Then I piped a ring of icing around the edge so I’d have something for the sprinkles to stick to, and it would cover the green cupcake.

I put flower and heart sprinkles around the edge, but you could use anything.  Then I filled the hollow in the cupcake with eggs and tried both the oreo truffle chicks on top.  I still think the brown eyed chick is cuter.

My children all fought over who got to eat the cupcake nest, so it was obviously good.

Easter Cross Cupcake

I wanted to make a religious cupcake but with a pretty twist to it and I suddenly thought that tootsie rolls could be make to look just like crosses.

I started off with a cupcake rough iced to look like grass and then I cut three tootsie rolls in half and stuck them together to make crosses.

I made the center one slightly taller.

Then to make it pretty, I added some flowers and the final touch was a butterfly on Jesus’ cross.

Is it bad that my children loved eating the replica of the cross that Jesus died on?  Any thing that gets them to remember his sacrifice is good with me.

Sheep Cupcakes

I grew up on a farm and sheep are my favorite animal.  Unfortunately I’m not so good at making sheep out of icing. I started off with a cupcake rough iced to look like grass.

Then I covered an oreo truffle in white chocolate and placed it on the cupcake.

I’d had a long day and just wanted to be done with cupcakes (sometimes even I get to that point and I LOVE cupcakes), and so I was in a rush piping his legs.

As you can see his front right leg is a bit deformed, but other than that, he was quite a sweet little sheep.  I only had one truffle ball left, so I couldn’t redo his leg without messing up the grass on the cupcake, so I just left him as he was.

He looked fine from the other side with his funny leg obscured.  Once again I realized how many attempts the people who publish cake decorating books must have to make before they get the perfect cupcake design, I just don’t have the time to make 10 sheep and chose the best one.  I piped a ball of icing for his head and used a mini marshmallow cut in half for his ears and put some flowers around him.  The flowers are Wilton flower sprinkles I found at Joann and I piped a dot of icing in the center and put a white pearlized sprinkle in the middle.

Bunny Cupcakes

I made a batch of oreo truffles last week to make Easter chicks out of and I was inspired by a design I saw in my Hello Cupcake book.  They showed the tail of a rabbit sticking out of a burrow and I thought I’d make my version.  I know that to create an actual rabbit is beyond my skills (as you’ll see at the end of this post), but I figured I could make a rabbit’s bottom.

First I rough iced a cupcake to look like grass

Then I covered my oreo truffle ball in white chocolate.  It didn’t need to be smooth as rabbits are pretty fluffy. Then I stuck a mini marshmallow tail on the truffle ball and piped feet using white icing and added claws using a small piping tip and chocolate icing.

It looked a bit bare so I added some flowers

Then because I had some oreo crumbs left over, I scattered them around the rabbit’s bottom to look as if he’d kicked up some dirt.

The overall result was very cute and it’s probably one of my favorite cupcake designs.  I think I’ll make them as Easter treats from my children’s preschool classes.

I was so happy with this cupcake that I was inspired to try to make a rabbit’s head.  As you can see I’m not very good at making anything that requires a cute expression.  I used large marshmallows for the ears, with pink icing piped inside and then a mini marshmallow cut in half for the teeth.  The eyes are M&Ms and it’s nose is a blob of icing. My children liked it, but I don’t think I’d make them again.  It’s also really hard to keep the ears from falling down.  I’ll stick to rabbit’s bottoms.

Packaging Cupcakes–Cheap and Cute!

I love giving cupcakes as a teacher gift, but by the time you’ve bought the cupcake boxes it becomes quite an expensive gift, particularly if you have 14 teachers to give gifts to like we do.
I’d seen this cute idea on Martha Stewart’s website but didn’t have time to glue all the paper on so I improvised.

I’d bought some cute Valentine’s gift bags and had some plastic glasses, so I put a cupcake in each glass and then put them in the treat bags.

Print a cute label using clip art and they make a cost effective, durable (my 5 year old swung his teacher’s cupcake over his head and it didn’t squish) and pretty way of saying thank you.

Candy Heart Cupcakes

Once again a www.pinterest.com post inspired me to create a cupcake design.

I saw this pin and thought it would be cute to make on a cupcake.  Unfortunately all our candy canes from Christmas have been eaten so we improvised.
Adison had chosen some sour punch straws last week as a treat.

So we iced a cupcake and then cut a sour punch straw in half and bent it into a heart shape.

Then we filled the center of the heart with sprinkles.

Then we tried different sprinkles in the center of a pink cupcake.

Both were cute and tasted great, but we liked the first design best.
